- 1.5 lbs fresh cod fillets
- 1 cup jarred roasted red peppers (drained)
- 4 cloves garlic (minced)
- 1 cup low-sodium chicken broth
- 2 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Fresh basil or parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
- If using fresh peppers, roast on a baking sheet for about 20 minutes until charred. If using jarred peppers, drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté minced garlic for about 1 minute until fragrant.
- Blend roasted or jarred peppers with sautéed garlic and chicken broth until smooth.
- Place cod fillets in the baking dish, pour the sauce over them, and bake for 20-25 minutes or until the fish flakes easily with a fork.
- Garnish with freshly chopped herbs before serving.
