- 2 lbs Yukon Gold potatoes
- 3 large sweet onions
- 4 tbsp unsalted butter
- 2 cups low-sodium beef broth
- 1 ½ cups Gruyère cheese
- 2 tsp fresh thyme
- Salt and pepper to taste
- 2 cloves garlic
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, melt the butter and sauté sliced onions until golden brown. Stir in minced garlic and thyme.
- In a greased baking dish, layer half of the sliced potatoes followed by half of the onion mixture. Repeat the layers.
- Pour beef broth over the layers, ensuring even coverage, then top with shredded Gruyère cheese.
- Cover with foil and bake for 45 minutes; then remove foil and bake for an additional 15 minutes until golden brown.
- Allow to rest for about 10 minutes before serving.
