- 1 package of puff pastry (2 sheets, thawed)

Instructions
- Caramelize onions in olive oil over medium heat with a pinch of salt until golden brown (15-20 minutes). Allow to cool.
- In a mixing bowl, combine ground sausage, cooled onions, thyme, salt, and pepper. Mix in optional cheese and mustard if desired.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out puff pastry on a floured surface and cut into rectangles (4×6 inches). Place a spoonful of filling on each rectangle, fold over, seal edges with a fork, and brush tops with beaten egg.
- Bake for 20-25 minutes until golden brown. Let cool slightly before serving.
