Ingredients
- 1 cup fresh spinach, chopped
- 1 cup canned artichoke hearts, drained and chopped
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup cream cheese, softened
- 8 flour tortillas
- Garlic powder, salt, and pepper to taste
Instructions
- In a mixing bowl, combine spinach, artichoke hearts, shredded cheese, cream cheese, garlic powder, salt, and pepper. Mix until well blended.
- Heat a non-stick skillet over medium heat for about 2 minutes.
- Place a tortilla on a flat surface and spread about 1/4 of the filling on half of it. Fold the tortilla in half to cover the filling.
- Cook the quesadilla in the skillet for 3-4 minutes on each side until golden brown and crispy.
- Allow to cool slightly before cutting into wedges. Serve warm with your favorite garnishes.
