Instructions
- Prepare the shrimp by peeling and deveining them. Cut asparagus into 2-inch pieces and slice the mushrooms.
- Marinate shrimp in a mixing bowl with 1 tablespoon of soy sauce and a pinch of salt for about 10 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.
- Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
- Toss in marinated shrimp; cook for 2-3 minutes until they begin to turn pink.
- Stir in asparagus and mushrooms; cook for an additional 3-5 minutes until asparagus is tender yet crisp.
- Pour in remaining soy sauce and optional oyster sauce; mix well to coat ingredients evenly.
- Adjust seasoning with salt and pepper if needed.
- Drizzle sesame oil over the stir-fry before removing from heat.
- Serve immediately.
