- 1 large bunch celery

- 1/2 cup gruyere cheese, shaved

Instructions
- In a small bowl or jar, whisk together the olive oil, lemon juice, apple vinegar, maple syrup, Dijon mustard, garlic powder, salt, and pepper until well combined. Set aside.
- Trim the celery and slice it into thin pieces. If fresh, chop the leaves for garnish.
- Using a vegetable peeler, shave the gruyere cheese into thin slices.
- Core and thinly slice the apples into bite-sized pieces.
- In a large salad bowl, combine chopped celery, apple slices, shaved gruyere cheese, and reserved celery greens. Drizzle with the prepared dressing and season with salt and pepper to taste.
