- 2 lbs beef chuck or stew meat, cut into cubes
- Salt and black pepper to taste
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons curry powder
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 can (13.5 oz) coconut milk
Instructions
- Season beef cubes with salt and black pepper.
- Heat vegetable oil in a skillet over medium-high heat; sear the beef until browned on all sides.
- Transfer seared beef to a slow cooker; add onion, garlic, ginger, curry powder, garam masala, cumin, paprika, and cayenne pepper.
- Cover and cook on low for 6-8 hours until beef is tender.
- Stir in coconut milk before serving and allow it to warm through.
- Serve with warm garlic naan.
