Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 oz taco seasoning mix
- 14.5 oz can diced tomatoes with green chilies
- 15 oz can black beans, drained and rinsed
- 15 oz can corn, drained
- 1 cup salsa
- 1 cup shredded Mexican cheese blend
- 6 small flour or corn tortillas, cut into strips
Instructions
- In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
- Add diced onion to the skillet and sauté until softened (about 3-4 minutes). Stir in minced garlic for an additional minute.
- Mix in taco seasoning and cook briefly before adding diced tomatoes (with juice). Remove from heat.
- Spray the slow cooker with non-stick cooking spray. Layer the bottom with salsa followed by tortilla strips, half of the beef mixture, black beans, and corn. Repeat layers ending with tortilla strips topped with remaining salsa.
- Cover and cook on low for 4–5 hours or high for 2–3 hours.
- About 15 minutes before serving, sprinkle cheese on top until melted.
- Garnish with cilantro and serve with sour cream, jalapeños, or avocado if desired.
