- 500 grams strong white flour
- 300 ml sourdough starter
- 200 ml milk
- 75 grams sugar
- 10 grams salt
- 10 grams mixed spice powder
- 75 grams butter
- 200 grams mixed dried fruit (currants, raisins)
Instructions
- In a large mixing bowl, combine the flour, sugar, salt, and mixed spice powder.
- Add the sourdough starter and milk; stir until combined.
- Gradually mix in the melted butter until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the kneaded dough in a bowl covered with a kitchen towel; let it rise in a warm place for 4-6 hours or until doubled in size.
- Punch down the dough and mix in the dried fruit.
- Divide into equal pieces (about 12) and shape into round buns.
- Arrange on a lined baking sheet; cover again and let rise for another 2 hours.
- Preheat oven to 190°C (375°F) and bake for 20-25 minutes until golden brown.
