Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until softened (about 5–8 minutes). Add garlic, Italian seasoning, cumin, thyme, and red pepper flakes; cook for another minute.
  2. Stir in rinsed split peas, bay leaves, chicken ham bone, and chicken broth. Bring to a boil, then reduce heat and simmer uncovered for 60–90 minutes until peas are soft.
  3. Remove the ham bone, shred meat back into soup. Optionally blend part of the soup for creaminess before serving.
