- 1 box (18.25 oz) vanilla cake mix
- 1/3 cup butter (softened)
- 2 large eggs
- 3 cups fresh strawberries (sliced)
- 8 oz cream cheese (softened)
- 1/3 cup sugar
- 1 tsp vanilla extract
- Optional: 1.5 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×13 inch baking pan with cooking spray or parchment paper.
- In a mixing bowl, combine softened butter, one egg, and vanilla cake mix until it forms a stiff dough.
- Set aside one cup of the mixture for topping; press the remaining dough into the prepared pan.
- Bake crust for 10 minutes; meanwhile, beat cream cheese, sugar, remaining egg, vanilla extract, and lemon juice until smooth.
- Spread cream cheese mixture over baked crust; layer with sliced strawberries and reserved crumble topping.
- Bake for an additional 30–35 minutes until golden brown and set in the center.
- Cool on a wire rack before chilling for at least 30 minutes prior to serving.
