Instructions
- Preheat oven to 325°F (163°C) and line a mini muffin tin or an 8×8-inch pan with parchment paper.
- In a mixing bowl, combine crushed graham crackers (or golden Oreos) with melted butter and press into the bottom of the prepared pan.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream, vanilla extract, and strawberry puree until combined.
- Pour cheesecake mixture over the crust and bake for approximately 20-25 minutes in a mini muffin tin or 35-40 minutes in an 8×8-inch pan.
- Allow to cool at room temperature before refrigerating for at least four hours.
- For the topping, mix crushed Oreos (or vanilla wafers) with freeze-dried strawberries and melted butter; sprinkle over chilled cheesecake bites before serving.
