Instructions
- Preheat the oven to 350°F (175°C).
- Spread the softened sugar cookie dough onto a parchment-lined baking sheet and bake for 15-20 minutes until lightly golden. Allow cooling completely.
- In a mixing bowl, beat together softened cream cheese and butter until smooth. Gradually mix in powdered sugar and vanilla until fluffy.
- In a saucepan over medium heat, combine water and sugar until dissolved. Stir in the cornstarch mixture until thickened, then mix in the vegan gelatin until fully dissolved.
- Spread the frosting evenly over the cooled cookie base. Slice fresh strawberries and arrange them on top, then drizzle with the glaze.
- Refrigerate for at least an hour before slicing into squares and serving.
