Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with foil.
- In a bowl, combine diced rhubarb, sliced strawberries, sugar, and cornstarch. Mix until syrupy and set aside.
- Roll out the pie crust to fit a 9-inch pie plate; trim and flute edges.
- Pour the filling into the prepared crust.
- Prepare streusel by mixing flour and brown sugar, then cutting in butter until crumbly.
- Sprinkle streusel over the filling evenly.
- Bake for 65-75 minutes until golden brown and bubbly.
- Cool completely before serving.
