- 1 box vanilla cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1 package (3 oz) strawberry vegan gelatin mix
- 1 package (3 oz) vanilla instant pudding mix
- 1/2 cup unsalted butter, softened
- 1 cup all-purpose flour (divided)
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tub (8 oz) Cool Whip topping, thawed
Instructions
- Preheat oven to 350°F. Line a 9×9 inch cake pan with aluminum foil and spray with non-stick cooking spray.
- In a large mixing bowl, combine cake mix, eggs, and vegetable oil using an electric mixer until smooth.
- Press the dough evenly into the prepared pan and bake for 20 minutes or until edges turn lightly brown. Allow cooling completely before frosting.
- To make the topping, blend softened cream cheese with powdered sugar and vanilla extract until smooth. Fold in the Cool Whip gently.
- Spread the cream cheese topping over the cooled base and chill before cutting into bars.
