- 4 large eggs, room temperature
- ⅔ of the prepared cookie dough balls
- 1 cup white chocolate chips
- ⅓ cup heavy cream
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- For the crust: Mix flour, baking soda, and salt in one bowl; beat butter and sugar until fluffy in another. Combine wet and dry ingredients; mix in sprinkles. Press into pan and bake for 10-12 minutes until golden.
- For cookie dough balls: Cream butter and sugar; add vanilla and milk. Stir in flour and salt; fold in sprinkles. Chill in small balls.
- For filling: Beat cream cheese until smooth; add sugar, sour cream/yogurt, heavy cream, vanilla. Mix in eggs one at a time; fold in cookie dough balls.
- Pour filling into cooled crust; bake in a water bath for 60-70 minutes until slightly jiggly. Chill overnight.
- Make ganache by heating heavy cream; pour over white chocolate chips until smooth. Decorate cheesecake before serving.
