Instructions
- Preheat the oven to 350°F (180°C).
- Roll out puff pastry into a rectangle and place it on a parchment-lined cookie sheet.
- Create edges by folding over the pastry and pressing firmly.
- Brush edges with an egg wash made from whisking the egg yolk with water.
- Dock the dough with a fork and fill with beans to prevent puffing; bake for about 20 minutes until golden brown.
- Allow the tart crust to cool on a wire rack.
- Whisk together cream cheese, lime juice, and sugar; spread evenly over cooled crust.
- Arrange sliced peaches and berries artfully on top; garnish with mint leaves.
