- 3 to 4 lbs boneless top sirloin roast
- 1 crushed beef bouillon cube
- 1/2 large onion (chopped)
- 3 cloves garlic (minced)
- 1 scotch bonnet pepper
- Fresh thyme sprigs
- Crushed allspice berries
- Beef broth and water
Instructions
- Prepare all ingredients by chopping onions, mincing garlic, and handling the scotch bonnet pepper with gloves.
- Heat vegetable oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned.
- Add chopped onions, minced garlic, green onions, thyme sprigs, celery, black pepper, salt, and browning sauce to the pot.
- Pour in beef broth and enough water to cover three-fourths of the roast. Add crushed allspice berries and the scotch bonnet pepper.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 150 minutes until fork-tender.
- Let the roast rest before slicing into thick pieces and serving with baby potatoes garnished with parsley.
