Ingredients
- 1 cup granulated sugar
- 4 large eggs (separated)
- 1/2 cup unsalted butter (melted and cooled)
- 2/3 cup all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon grated lemon zest
- 1/2 cup freshly squeezed lemon juice
- 1 1/2 cups whole milk
Instructions
- Preheat oven to 325°F (163°C) and prepare an 8-inch square baking dish by greasing and lining it with parchment paper.
- In a large bowl, beat egg yolks with sugar until pale and creamy. Mix in melted butter, lemon zest, and lemon juice.
- Sift flour and salt into the mixture, stirring until just combined. Gradually whisk in whole milk until smooth.
- In a separate bowl, beat egg whites to stiff peaks. Carefully fold into batter in three additions without deflating the mixture.
- Pour batter into the prepared dish and bake for 40-45 minutes or until golden brown and just set in the center. Let cool completely before serving.
