- 2 ½ pounds Yukon gold potatoes
- 6 hard-boiled eggs (optional)
- 1 cup diced celery
- ½ cup sliced radishes
- 2 green onions (sliced)
- ¾ cup mayonnaise
- ¼ cup sweet relish
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt and black pepper (to taste)
Instructions
- Peel and cube the potatoes; boil in salted water until fork-tender (about 15 minutes). Drain and cool completely.
- In a large mixing bowl, whisk together mayonnaise, relish, apple cider vinegar, mustard, sugar, salt, and pepper.
- Add cooled potatoes to the dressing; gently mix in eggs (if using), celery, radishes, and green onions.
- Chill in the refrigerator for at least two hours before serving.
