Instructions
- Preheat oven to 375°F. Line a 10×15-inch baking sheet with parchment paper.
- In a mixing bowl, cream softened butter and sugar until light and fluffy. Add egg and vanilla; mix well.
- Gradually add flour, baking powder, and salt; mix until smooth.
- Spread dough evenly on the baking sheet and bake for 10-12 minutes until golden brown. Allow cooling slightly.
- While cooling, combine goat cheese and honey until smooth.
- Spread goat cheese mixture over the warm cookie base. Slice strawberries thinly and arrange on top.
- Cut into squares or wedges for serving.
