Instructions
- Wash the cucumber under cold water and slice into thin rounds (about 1/8-inch thick). Place slices in a large mixing bowl.
- Rinse strawberries and hull them. Slice into thin pieces (about 1/4-inch thick) and add to the bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
- Pour dressing over the cucumber and strawberry mixture and toss gently to coat all ingredients.
- Add chiffonade mint leaves into the salad and mix again.
