Instructions
- Preheat your oven to 325°F (160°C).
- For the crust: Combine graham cracker crumbs and melted butter; press into a springform pan and bake for 10 minutes.
- For the filling: Beat cream cheese and sugar until smooth; add eggs one at a time, then mix in mascarpone, cooled coffee, vanilla extract, and optional coffee liqueur.
- Pour filling over the crust; bake for 50–60 minutes until center is slightly jiggly. Cool completely before refrigerating for at least 4 hours.
- Prepare Chocolate Espresso Cream by whipping heavy cream with powdered sugar and cocoa until soft peaks form.
- Top chilled cheesecake with chocolate cream and garnish with chocolate shavings before serving.
