- 2 tablespoons strong espresso or coffee
- 1 tablespoon coffee liqueur (optional)
- 1/3 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 10 oz (285g) white chocolate (for coating)
- Unsweetened cocoa powder (for dusting)
Instructions
- Pulse ladyfingers in a food processor until finely crushed.
- In a mixing bowl, combine mascarpone cheese, powdered sugar, espresso, coffee liqueur (if using), and vanilla extract; whisk until smooth.
- Gently fold crushed ladyfingers into the mascarpone mixture until well combined.
- Chill mixture for 15–20 minutes to firm up.
- Scoop out portions and roll into 1-inch balls; place on parchment-lined tray.
- Refrigerate for another 30 minutes to set.
- Melt white chocolate gently; dip each truffle in chocolate and let excess drip off.
- Dust with cocoa powder while still tacky, then refrigerate until set.
