Instructions
- In a large mixing bowl, beat softened cream cheese until smooth using an electric mixer.
- Add chilled heavy whipping cream, confectioner’s sugar, and vanilla extract; beat until light and fluffy (about 3-4 minutes).
- In a 9×13 inch baking pan, layer ingredients: start with a thin layer of cream filling, then graham crackers, followed by one-third of the cream mixture and half of the berries. Repeat layers ending with the remaining cream mixture on top.
- Chill in the refrigerator for at least four hours or overnight for optimal results.
- Serve chilled and garnish with extra berries or mint if desired.
