Ingredients

  • 4 cups water (divided)
  • 1 cup sugar
  • 1 cup fresh squeezed lemon juice
  • 1 tablespoon finely grated lemon peel
  • 1 ½ cups frozen (thawed) or 2 cups fresh mixed berries
  • Fresh parsley for garnish

Instructions

  1. Thaw berries in a strainer over a bowl to capture juices.
  2. In a large pot, boil 2 cups of water with sugar until dissolved. Remove from heat and stir in lemon juice and grated peel; let cool.
  3. Blend 1 cup of the cooled mixture with thawed berries until smooth. Strain to remove seeds.
  4. Combine strained berry mixture with remaining lemon mixture, adding berry juices and water to desired dilution.
  5. Chill in the refrigerator before serving over ice.
