- 4 cups water (divided)
- 1 cup sugar
- 1 cup fresh squeezed lemon juice
- 1 tablespoon finely grated lemon peel
- 1 ½ cups frozen (thawed) or 2 cups fresh mixed berries
- Fresh parsley for garnish
Instructions
- Thaw berries in a strainer over a bowl to capture juices.
- In a large pot, boil 2 cups of water with sugar until dissolved. Remove from heat and stir in lemon juice and grated peel; let cool.
- Blend 1 cup of the cooled mixture with thawed berries until smooth. Strain to remove seeds.
- Combine strained berry mixture with remaining lemon mixture, adding berry juices and water to desired dilution.
- Chill in the refrigerator before serving over ice.
