Instructions
- Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, mix the egg, milk, melted butter, and vanilla until combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just moistened.
- Fold in the chopped apples.
- To make the streusel topping, combine flour, brown sugar, cinnamon, and cold butter in a small bowl until crumbly.
- Divide muffin batter among the cups and sprinkle with streusel topping.
- Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
