- 2 small onions, diced
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1 green bell pepper, diced
- 1 pound lean ground beef
- 1 can (14 oz) diced tomatoes
- ½ head of cabbage, chopped
- 1 to 2 cups shredded cheddar cheese
Instructions
- Dice the onions and bell peppers. Mince the garlic and chop the cabbage.
- In a large skillet or Dutch oven, heat olive oil over medium-high heat. Sauté onions and garlic until soft, then add bell peppers until softened. Remove from pan.
- Brown the ground beef in the same pan until cooked through.
- Stir in onion powder, oregano, paprika, diced tomatoes, salt, and pepper.
- Add chopped cabbage to the mixture and cook covered for about 25 minutes or until tender.
- Sprinkle cheese on top and allow it to melt before serving.
