Ingredients
- 1 can black beans
- 1 can sweet corn
- 3 cups cooked brown rice
- 6 large flour tortillas
- 1 cup guacamole
- 1 cup salsa
- 3/4 cup vegan sour cream
- 2 teaspoons fresh lime juice
- 1 teaspoon paprika powder
- 1/2 teaspoon smoked paprika powder
- 1 teaspoon cumin
- 2 green onions, cut into rings
- 1/2 cup freshly chopped cilantro
- Salt, to taste
- Black pepper, to taste
Instructions
- Drain and rinse black beans and corn.
- In a bowl, mix black beans, corn, lime juice, paprika, cumin, salt, pepper, green onions, and cilantro.
- Warm tortillas slightly for easier rolling.
- On each tortilla, layer cooked brown rice followed by the bean mixture.
- Add toppings of guacamole, salsa, lettuce, vegan cheese, and sour cream.
- Fold the sides of the tortilla over the filling and roll tightly into a burrito shape.
- Serve immediately or wrap in foil for later.
