  • 1 can sweet corn
  • 3 cups cooked brown rice
  • 6 large flour tortillas
  • 1 cup guacamole
  • 1 cup salsa
  • 3/4 cup vegan sour cream
  • 2 teaspoons fresh lime juice
  • 1 teaspoon paprika powder
  • 1/2 teaspoon smoked paprika powder
  • 1 teaspoon cumin
  • 2 green onions, cut into rings
  • 1/2 cup freshly chopped cilantro
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Drain and rinse black beans and corn.
  2. In a bowl, mix black beans, corn, lime juice, paprika, cumin, salt, pepper, green onions, and cilantro.
  3. Warm tortillas slightly for easier rolling.
  4. On each tortilla, layer cooked brown rice followed by the bean mixture.
  5. Add toppings of guacamole, salsa, lettuce, vegan cheese, and sour cream.
  6. Fold the sides of the tortilla over the filling and roll tightly into a burrito shape.
  7. Serve immediately or wrap in foil for later.
