- 5 cloves garlic
- 1 medium rutabaga
- 4 large potatoes
- ¼ head green cabbage
- 4 cups vegetable stock
- 1 bottle (330ml) Guinness
- ¼ cup soy sauce
- Fresh herbs: bay leaves, thyme, rosemary
Instructions
- Heat oil in a large Dutch oven over high heat.
- Sear vegan beef or mushrooms until golden, then set aside.
- Lower heat to medium; sauté onions, carrots, and celery until soft.
- Add garlic; cook for 30 seconds.
- Stir in flour and cook for another minute.
- Gradually add Guinness while stirring to eliminate lumps.
- Combine remaining ingredients and simmer uncovered for 45–50 minutes.
- Return seared protein to the pot ten minutes before serving.
