Ingredients

  • 2 tablespoons oil
  • 1 large onion
  • 3 large carrots
  • 2 ribs celery
  • 5 cloves garlic
  • 1 medium rutabaga
  • 4 large potatoes
  • ¼ head green cabbage
  • 4 cups vegetable stock
  • 1 bottle (330ml) Guinness
  • ¼ cup soy sauce
  • Fresh herbs: bay leaves, thyme, rosemary

Instructions

  1. Heat oil in a large Dutch oven over high heat.
  2. Sear vegan beef or mushrooms until golden, then set aside.
  3. Lower heat to medium; sauté onions, carrots, and celery until soft.
  4. Add garlic; cook for 30 seconds.
  5. Stir in flour and cook for another minute.
  6. Gradually add Guinness while stirring to eliminate lumps.
  7. Combine remaining ingredients and simmer uncovered for 45–50 minutes.
  8. Return seared protein to the pot ten minutes before serving.
