- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups fresh strawberries, divided
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- ½ cup sour cream
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press firmly into the bottom of a springform pan and bake for 10 minutes.
- In another mixing bowl, beat softened cream cheese and sugar on medium speed until smooth. Add sour cream and vanilla extract; mix until well combined.
- Roughly chop half of the strawberries and gently fold them into the cream cheese mixture.
- Pour the filling over the baked crust, smooth the top, and bake for 50-60 minutes or until slightly jiggly in the center.
- Allow cooling at room temperature for one hour, then refrigerate for at least four hours or overnight.
- Before serving, slice remaining strawberries to top each slice beautifully.
