- 1 lb shrimp (peeled and chopped)
- 1/2 cup rice flour
- 1/4 cup all-purpose flour
- 1 egg
- Fresh herbs (cilantro, mint, green onions)
- Vegetable oil (for frying)
- Fish sauce (for dipping)
Instructions
- In a mixing bowl, combine rice flour, all-purpose flour, baking powder, salt, and black pepper. Mix well.
- Add cold water and egg; whisk until smooth.
- Fold in chopped shrimp and herbs until evenly mixed.
- Heat vegetable oil in a frying pan over medium heat.
- Drop small amounts of batter into hot oil; fry until golden brown (3–4 minutes per side).
- Remove fritters with a slotted spoon and drain on paper towels.
- For the dipping sauce: mix fish sauce, sugar, lime juice, warm water, minced garlic, and optional chilies.
- Serve fritters hot with the dipping sauce on the side.
