Instructions
- Preheat oven to 350°F (175°C), greasing two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then mix in vanilla extract and cherry juice.
- Gradually add dry ingredients alternately with milk until just combined.
- Fold in chopped cherries gently.
- Divide batter between pans and bake for 25–30 minutes or until a toothpick comes out clean.
- Cool cakes for 10 minutes before transferring to wire racks to cool completely.
- Prepare frosting by beating butter until creamy; gradually add powdered sugar and cherry juice until smooth.
- Frost the cooled cakes and garnish with whole cherries.
