Ingredients
- 3 cups strawberries (chilled, tops cut off)
- 3 cups watermelon (chilled, seedless if possible, cubed)
- 2 tablespoons fresh mint (chiffonade or chopped fine)
- ½ cup feta cheese (crumbled)
- 2 tablespoons olive oil
- Juice of 1 whole fresh lime
- 1 ½ teaspoons honey (or maple syrup)
- Crushed sea salt flakes and black pepper to taste
Instructions
- In a mason jar or small bowl, combine olive oil, lime juice, honey (or maple syrup), salt flakes, and black pepper. Shake well until mixed.
- Trim the tops off the strawberries and slice each into 3 or 4 pieces. Cut the watermelon into 1 to 1½ inch cubes.
- On a serving platter, arrange the watermelon cubes and strawberry slices. Gently stir in chopped mint, crumbled feta cheese, and chia seeds.
- Drizzle the dressing over the salad and adjust seasoning with more lime juice, salt flakes, or black pepper as desired. Serve immediately.
