  • Juice of 1 whole fresh lime
  • 1 ½ teaspoons honey (or maple syrup)
  • Crushed sea salt flakes and black pepper to taste

Instructions

  1. In a mason jar or small bowl, combine olive oil, lime juice, honey (or maple syrup), salt flakes, and black pepper. Shake well until mixed.
  2. Trim the tops off the strawberries and slice each into 3 or 4 pieces. Cut the watermelon into 1 to 1½ inch cubes.
  3. On a serving platter, arrange the watermelon cubes and strawberry slices. Gently stir in chopped mint, crumbled feta cheese, and chia seeds.
  4. Drizzle the dressing over the salad and adjust seasoning with more lime juice, salt flakes, or black pepper as desired. Serve immediately.
