Instructions
- Heat olive oil in a Dutch oven over medium heat.
- Add cubed chicken and diced onion; sauté for 5-7 minutes until chicken is cooked and onion is translucent.
- Stir in minced garlic and cook for an additional 30 seconds.
- Add remaining ingredients (except heavy cream) and stir to combine.
- Cover and simmer on low heat for about 20 minutes.
- Remove from heat and stir in heavy cream.
- Serve warm with desired toppings like avocado, sour cream, or cheese.
