- 1½ lbs. bone-in skinless chicken breast
- 8 oz. cream cheese (softened)
- 2 cans (15.5 oz.) cannellini beans (drained)
- 2 cans (4 oz.) mild green chilies (undrained)
Instructions
- In a bowl, combine all seasonings.
- Sauté onion and jalapeno in butter until soft; add garlic.
- Sprinkle flour over vegetables; cook briefly.
- Gradually stir in chicken broth and half-and-half.
- Optionally, blend some beans with broth and return to pot.
- Add seasonings, hot sauce, Worcestershire sauce, and green chilies; simmer.
- Add seasoned chicken and corn; cook until chicken is done.
- Shred cooked chicken and mix in softened cream cheese.
- Taste and adjust seasonings as needed before serving.
