Instructions
- Preheat your oven to 300°F (149°C) and prepare a 9-inch springform pan with foil for a water bath.
- In a food processor, blend graham crackers into fine crumbs, then mix in melted butter and press into the bottom of the pan.
- Beat cream cheese until smooth, then add eggs, sour cream, and vanilla; mix until combined. Gradually add sugar and melted white chocolate.
- Fold in fresh raspberries gently and pour over the crust.
- Place the springform pan in a larger baking pan filled with water and bake for about 2 hours until set but slightly wobbly in the center.
- Allow to cool gradually in the oven before refrigerating overnight.
- Prepare raspberry sauce by simmering remaining berries with sugar until thickened, then strain.
- Serve chilled topped with raspberry sauce, whipped cream, and fresh raspberries.
