Ingredients
- 1 pound lean ground beef
- 1 medium onion
- 2–3 cloves garlic
- 1 packet taco seasoning
- 1 can black beans
- 1 can corn kernels
- 1 can diced tomatoes with green chilies
- 1 can condensed cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded Mexican cheese blend
- 9.25 oz bag Nacho Cheese Doritos
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a skillet over medium heat, brown the ground beef with diced onion and minced garlic until fully cooked. Drain any excess fat.
- Stir in taco seasoning, black beans, corn, and diced tomatoes. Simmer for a few minutes.
- In a separate bowl, mix together cream of mushroom soup and sour cream until smooth.
- Layer half of the beef mixture in the baking dish followed by half of the creamy mixture, then add 1 cup of shredded cheese and half of the crushed Doritos. Repeat layers ending with cheese on top.
- Cover with foil and bake for 15 minutes; then remove foil and bake an additional 10 minutes until bubbly.
