  • 3 scallions (diced)
  • 2 cloves garlic (minced)
  • 1 tsp grated ginger
  • 1 cup sliced shiitake mushrooms
  • 48 oz low-sodium chicken broth
  • 4 baby bok choy
  • 30 frozen mini wontons
  • 1½ tbsp soy sauce
  • 1½ tbsp shaoxing apple vinegar

Instructions

  1. In a large pot, heat 2 teaspoons of sesame oil over medium heat. Sauté the white parts of scallions, garlic, ginger, and mushrooms until softened.
  2. Pour in the chicken broth and bring to a boil. Add bok choy and frozen wontons; simmer until cooked through.
  3. Stir in the green parts of scallions, remaining sesame oil, soy sauce, and vinegar before serving.
