Ingredients
- 2 medium zucchini
- 1 tsp dried oregano
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella
- 1 cup marinara sauce
- Fresh basil for garnish
Instructions
- Preheat oven to 190C (375F) and lightly grease a baking dish.
- Slice zucchini lengthwise and layer them in the baking dish, sprinkling dried oregano over them.
- Spread half of the ricotta over the zucchini and spoon half of the marinara sauce on top. Repeat layers with remaining zucchini, ricotta, and marinara.
- Top with shredded mozzarella cheese.
- Cover with aluminum foil and bake for 25-30 minutes, then uncover and bake for an additional 10-15 minutes until golden.
- Let cool briefly, garnish with fresh basil, and serve warm.
