- 2 rockfish fillets (about 1 pound)

Instructions
- Season rockfish fillets with salt and pepper.
- In a shallow dish, mix almond flour and protein powder; coat each fillet on all sides.
- Heat avocado oil in a large skillet over medium heat. Fry coated fillets for about 2½ to 3 minutes per side until golden brown. Transfer to paper towels to drain excess oil.
- In a medium saucepan, heat avocado oil and sauté garlic until fragrant. Add vinegar and lemon juice; reduce slightly before stirring in heavy cream and butter until thickened. Season with salt and add tarragon.
- Serve fried fillets topped with lemon cream sauce and garnish as desired.
