- 3 large avocados (chopped)
- 1 pint cherry tomatoes (chopped)
- 4 ounces plain crumbled feta cheese
- 1 small bunch fresh parsley (chopped)
- 1 tablespoon olive oil
- 1.5 tablespoons red apple vinegar
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine all ingredients except for the avocados. Stir well until evenly mixed.
- Chill the mixture in the refrigerator for a few hours or overnight to enhance flavors.
- Just before serving, fold in chopped avocados gently.
- Transfer to a serving dish, garnish with fresh parsley if desired, and serve with tortilla chips.
