  • 1 ½ cups all-purpose flour

  • 3 tbsp instant banana pudding mix (for glaze)
  • ¼ cup milk (for glaze)
  • crushed vanilla wafers (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a stand mixer, beat cream cheese and banana pudding mix until smooth. Add egg and vanilla extract; mix well. Fold in chopped vanilla wafers.
  3. In another bowl, whisk together flour, baking soda, and salt. In the stand mixer, combine mashed bananas and sugar, mixing until blended. Add vegetable oil and eggs; mix until smooth.
  4. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  5. Spray a loaf pan with baking spray; pour half of the batter into it. Spread the cream cheese filling over this layer, then top with remaining batter.
  6. Bake for 45-55 minutes or until golden brown and a toothpick comes out clean.
  7. Let cool before glazing with a mixture of banana pudding mix, milk, vanilla bean paste, and powdered sugar.
