- 3 tbsp instant banana pudding mix (for glaze)
- ¼ cup milk (for glaze)
- crushed vanilla wafers (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- In a stand mixer, beat cream cheese and banana pudding mix until smooth. Add egg and vanilla extract; mix well. Fold in chopped vanilla wafers.
- In another bowl, whisk together flour, baking soda, and salt. In the stand mixer, combine mashed bananas and sugar, mixing until blended. Add vegetable oil and eggs; mix until smooth.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Spray a loaf pan with baking spray; pour half of the batter into it. Spread the cream cheese filling over this layer, then top with remaining batter.
- Bake for 45-55 minutes or until golden brown and a toothpick comes out clean.
- Let cool before glazing with a mixture of banana pudding mix, milk, vanilla bean paste, and powdered sugar.
