  • ½ cup Greek yogurt
  • 1 large egg
  • 1 ½ cups mixed berries (blueberries and raspberries)
  • ¼ cup unsalted butter (melted)
  • ¾ cup powdered sugar
  • 1 ½2 ½ teaspoons milk or cream

Instructions

  1. Preheat oven to 425°F (220°C) and prepare muffin pan.
  2. Make the streusel topping by mixing flour, light brown sugar, and melted butter until crumbly.
  3. In a separate bowl, blend softened cream cheese, granulated sugar, cornstarch, and vanilla until smooth.
  4. Combine dry ingredients in one bowl and wet ingredients (egg, Greek yogurt, vegetable oil) in another; mix well.
  5. Fold wet mixture into dry ingredients gently before adding berries.
  6. Fill muffin cups with batter, add cream cheese filling, top with reserved berries and streusel.
  7. Bake at 350°F (175°C) for 30-35 minutes until golden brown.
