- 1 cup all-purpose flour
- 2/3 cup light brown sugar
- 6 oz cream cheese (softened)
- ½ cup Greek yogurt
- 1 large egg
- 1 ½ cups mixed berries (blueberries and raspberries)
- ¼ cup unsalted butter (melted)
- ¾ cup powdered sugar
- 1 ½ – 2 ½ teaspoons milk or cream
Instructions
- Preheat oven to 425°F (220°C) and prepare muffin pan.
- Make the streusel topping by mixing flour, light brown sugar, and melted butter until crumbly.
- In a separate bowl, blend softened cream cheese, granulated sugar, cornstarch, and vanilla until smooth.
- Combine dry ingredients in one bowl and wet ingredients (egg, Greek yogurt, vegetable oil) in another; mix well.
- Fold wet mixture into dry ingredients gently before adding berries.
- Fill muffin cups with batter, add cream cheese filling, top with reserved berries and streusel.
- Bake at 350°F (175°C) for 30-35 minutes until golden brown.
