Ingredients
- 1 pound rotini pasta
- 1 red bell pepper (chopped)
- 1 yellow bell pepper (chopped)
- 1 pint cherry or grape tomatoes (halved)
- ½ cup chopped red onion
- 3.8 ounce can sliced black olives
- 4 ounces mozzarella cheese (cubed)
- ½ cup grated Parmesan cheese
- ¼ cup chopped fresh parsley
- 1 cup Italian dressing
Instructions
- Boil salted water in a large pot and cook rotini until al dente. Drain and rinse with cool water.
- Set pasta aside to cool while chopping vegetables: bell peppers, tomatoes, and red onion.
- In a large mixing bowl, combine cooled pasta with chopped vegetables, olives, mozzarella, Parmesan, parsley, and Italian dressing. Stir well.
- Cover and chill in the refrigerator for at least two hours before serving.
