- 1 small jalapeño (chopped)
- 1 (15-ounce) can black beans (rinsed and drained)
- 1 tablespoon taco seasoning
- ¼ teaspoon salt
- 1 cup shredded Mexican cheese blend
- 4 small flour tortillas (8-inch size)
Instructions
- Heat 1 tablespoon of oil in a skillet over medium-high heat. Sauté onions and jalapeños until soft (about 3-4 minutes).
- Stir in black beans, taco seasoning, and salt; warm through and slightly mash the beans.
- Clean the skillet, add another tablespoon of oil, and place tortillas on a surface. Spread the bean mixture on half of each tortilla, top with cheese, then fold.
- Cook two folded tortillas at a time until golden brown (about 3 minutes per side). Repeat with remaining tortillas.
- Slice into wedges and serve warm with salsa or sour cream.
