- 2 large potatoes
- 2 tablespoons butter
- ¼ cup heavy cream
- 4 slices turkey bacon (cooked and crumbled)
- ½ cup shredded cheddar cheese
- 4 large eggs
- Fresh chives (for garnish)
Instructions
- Preheat oven to 350°F.
- Prick the potatoes with a fork, coat in canola oil and salt, then bake for about 1 hour until tender.
- Slice potatoes in half lengthwise and scoop out the filling into a bowl.
- Mix potato filling with butter, cream, half the bacon, cheese, garlic powder, onion powder, black pepper, and salt until smooth.
- Stuff potato skins with the mixture and create wells for the eggs.
- Crack an egg into each well, top with remaining bacon, then return to oven for an additional 15-20 minutes until eggs are set.
- Garnish with minced chives before serving warm.
