Ingredients
- 4 Vine-ripened Tomatoes (diced)
- 1/2 small Red Onion (diced)
- 2 tbsp Fresh Basil (chopped)
- 1 Clove Garlic (minced)
- 500 g Spaghetti Pasta
- 5 tbsp Extra-Virgin Olive Oil
- Oregano
- Sea Salt
- Black Pepper
Instructions
- Cook the spaghetti in a large pot of salted boiling water until al dente, according to package directions.
- While the pasta cooks, mix diced tomatoes and onions in a bowl. Add basil, garlic, oregano, salt, pepper, and 3 tbsp olive oil; let marinate for 10-15 minutes.
- Once pasta is cooked and drained, toss it with remaining olive oil before adding the bruschetta mixture. Combine gently.
- Serve immediately topped with extra basil and cheese if desired.
