Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract; mix until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients while mixing on low speed.
- Fold in quick oats, mini chocolate chips, and crushed Cadbury Mini Eggs (reserve some for topping).
- Scoop dough onto prepared baking sheets with space between each cookie.
- Bake for approximately 9 minutes or until edges are lightly golden.
- Allow to cool on baking sheets briefly before transferring to wire racks.
