Ingredients
Scale
- 1 lb boneless chicken breast (cut into 1-inch pieces)
- 2 cups broccoli florets
- 3 tbsp soy sauce
- 1 cup chicken broth (divided)
- 2 cloves garlic (finely chopped)
- 2 tsp ginger (finely chopped)
- Cooking spray
- Fresh parsley (for garnish)
Instructions
- Prepare the sauce by whisking together soy sauce, 3/4 cup chicken broth, sugar, and cornstarch in a small bowl. Set aside.
- Heat a nonstick skillet or wok over medium-high heat, lightly sprayed with cooking spray. Add chicken, garlic, and ginger; stir-fry for 2-3 minutes until the chicken is browned.
- Pour the sauce over the chicken and reduce heat to low. Simmer covered for 5 minutes, stirring halfway through.
- Add broccoli florets to the skillet, stir gently to coat them in the sauce, cover, and cook for another 5 minutes until tender-crisp.
- To thicken the sauce, mix remaining chicken broth with cornstarch to create a slurry; pour into the skillet while stirring until thickened (1-2 minutes).
- Serve over steamed rice or noodles.
